Apple Cinnamon Oatmeal

A sweet and earthy flavoring to oatmeal from apples and cinnamon with an added sweetness and thickening from a medjool date, flax seed meal, and plant milk.

Ingredients

  • 1 Cup Dried oats (Rolled or steel-cut) A great source of fiber, iron, protein, and healthy carbohydrates.
  • 1 Chopped Apple of choice (Pinklady, honeycrisp, fuji, gala, etc.) An addition of whole-food sweetness along with its beneficial phytonutrients and fiber.
  • Cups Plant milk (Oat, almond, hemp, macadamia, etc.) A great dairy replacement and depending on the product, a source of certain vitamins including B12, D, and E.
  • 1 Whole Pitted medjool date A great whole-food sweetening agent along with its fiber content.
  • 1 Tbsp Ground cinnamon (Ceylon or Cassia) The addition of a lovely cinnamon flavor.
  • 1 Tbsp Flax seed meal A great source of omega-3 fatty acids and a good texture enhancer for the oats.

Instructions

  • In a blender, add plant milk, a pitted medjool date, and the flax seed meal, and blend until the ingredients are entirely incorporated.
  • Then in a bowl, add the dried oats and the mixture from the blender. The oats should be fully covered by the plant milk mixture and if not, then add more plant milk until the oats are barely submerged.
  • Microwave the submerged oats for 2 minutes.
  • Mix in the chopped apples and ground cinnamon thoroughly then microwave for another 1½ minutes, or until the oats are fully cooked/soft.
