A quick, simple, and cheap recipe resulting in an addictive chocolate chip cookie dough safe to consume raw and filled with nutrients, excluding all the unhealthy factors of regular cookie dough (Refined sugars, refined oils, butter, refined flour, etc.).
1CupRolled OatsPacked with fiber, healthy carbohydrates, and micronutrients, including iron, these rolled oats will help give a flour-like texture to the dough.
7ChoppedPitted Medjool DatesAn addition of major sweetness and an agent to help bind everything together that contains lots of fiber and micronutrients.
1½CupsPlant MilkCombined with the oats, a creamy, wonderful texture will be produced. If the plant milk is fortified, then it can also be a decent source of micronutrients.
1tspVanilla ExtractA great addition to compliment the sweet flavor from the medjool dates.
½Cup100% Cacao ChipsA rich, chocolatey flavor to be sweetened slightly by the medjool dates that also contains micronutrients like iron, potassium, and phytochemicals.
Instructions
In a blender, add the rolled oats and blend until it is powdered.
Add the plant milk, chopped medjool dates, and vanilla extract to the blender and continue to blend until the medjool dates are finely blended and all ingredients are evenly incorporated.
Transfer the mixture from the blender to a bowl, add the cacao chips, and mix them in until they are thoroughly incorporated.
At this point, the cookie dough is ready to eat, but you can leave it in the fridge for ~30 minutes for chilled cookie dough. Enjoy!!
